Ingredients
- Boiled potatoes3 large
- Corn flour5 tbsp
- Rice flour2 tbsp
- Garlic powder and salt1 tsp
- Mild paprika1/2 tsp
Method
Mash and bind
Mash the warm boiled potatoes until smooth, then mix in the corn flour, rice flour, garlic powder, salt and paprika. Knead into a firm dough that does not stick; the two flours dry the mash so it rolls and cuts cleanly.
Roll the sheet
Roll the dough out between two sheets of parchment to a little under a centimetre thick. An even thickness matters so all the letters cook at the same rate and none scorch while others stay soft.
Cut the letters
Press alphabet cutters firmly straight down through the dough to stamp out clean letters. Gather the scraps, re-roll them and cut again so nothing is wasted and you get the most shapes from the sheet.
Freeze to firm
Lay the letters on a tray and freeze them for twenty minutes so they hold their shape. Firm, cold dough keeps the fine edges of each letter sharp instead of spreading and blurring in the heat.
Air-fry till golden
Brush the letters with a light coat of oil and lay them in a single layer. Air-fry at 200°C for 12 min, flipping once, until golden and crisp. Let them firm up for a minute before packing.
