Ingredients

  • Paneer slabs250 g
  • Flour1/2 cup
  • Breadcrumbs1 cup
  • Mixed herbs1 tbsp
  • Milk1/4 cup
  • Garlic powder1 tsp

Method

  1. Cut nugget shapes

Slice the paneer into flat nugget shapes about a centimetre thick so they crisp outside while staying soft within, then pat them dry. A dry surface lets the flour grip instead of sliding off.

  2. Set up a coating station

Set out three bowls: seasoned flour, milk, and breadcrumbs mixed with the herbs and garlic powder. This flour, milk, crumb order builds a sturdy shell that holds on and does not flake away in the basket.

  3. Dredge each piece

Coat a nugget in flour, dip it in milk, then press it firmly into the herbed breadcrumbs. For extra crunch, repeat the milk and crumb step, since a second layer builds a thicker, sturdier shell.

  4. Air-fry until golden

Lay the nuggets in a single layer and air-fry at 190°C for 13 min, flipping halfway. A single layer lets air reach both faces so they crisp evenly. Serve hot once both sides are golden with a herby dip.
