Ingredients
- Boiled sweet corn, crushed1.5 cups
- Mozzarella, grated1/2 cup
- Boiled potato, mashed2 medium
- Cornflour3 tbsp
- Black pepper & corianderto taste
Method
Crush the corn
Pulse half the boiled corn coarsely and leave the rest whole. This mix of paste and kernels gives the tikki both a creamy bite and a pop of sweetness in every mouthful.
Make the dough
Fold the corn into mashed potato with cornflour, black pepper and chopped coriander. The cornflour tightens the mix and helps trap the cheese centre during air-frying.
Stuff with cheese
Take a portion, flatten it on your palm, place a pinch of grated mozzarella in the middle, then seal and reshape into a smooth disc. Make sure no cheese peeks out or it will leak, then rest the shaped tikkis in the freezer for 10 minutes so the core stays put in the heat.
Brush and load
Coat each tikki lightly with oil so the surface turns golden rather than dry. Arrange in a single layer with space between them for hot air to circulate.
Air-fry till golden
Air-fry at 195C for 12 minutes, turning gently at the halfway point. The crust should be golden and the cheese molten inside. Serve immediately while stretchy.
