Ingredients

  • Mozzarella cubes12 small cubes
  • Boiled mashed potato1.5 cups
  • Grated processed cheese1/2 cup
  • Bread crumbs1 cup
  • Oregano and chilli flakes1 tsp

Method

  1. Season the potato

Mix the mashed potato with the grated processed cheese, oregano, chilli flakes and a little salt. Knead it until smooth and free of lumps so it wraps cleanly around the filling and does not crack open while cooking.

  2. Stuff with mozzarella

Take a lump of the potato in your palm, flatten it, set a mozzarella cube in the middle and pull the sides up to seal it fully. Roll it into a smooth ball with no cracks, or the cheese will find the gap and leak out.

  3. Double crumb

Roll each ball in bread crumbs, pressing gently so they grip the sticky potato surface. For a thicker crunch, dampen the ball with a few drops of water and crumb it a second time, which builds a shell that stays crisp.

  4. Freeze to set

Freeze the balls for 15 minutes so the crumb coat firms up and the cheese stays cold. A firm, chilled shell is the trick to a molten centre instead of a leaky, collapsed mess in the basket.

  5. Air-fry till crisp

Spray the balls with oil and space them out in the basket so hot air reaches every side. Air-fry at 180C for 10 min until golden, then serve straight away while the cheese inside is still molten.
