Ingredients

  • potato2
  • carrot1
  • beans6
  • cheese1/4 cup
  • cornflour2 tbsp
  • salt1/2 tsp

Method

  1. Grate and squeeze

Grate the potato, carrot and beans on the fine side of a grater. Wrap them in a clean cloth and squeeze out as much water as you can. Drier vegetables are the single biggest reason tots turn crisp rather than soft and pale.

  2. Mix the tots

Mix the grated vegetables with the cheese, cornflour and salt until it holds together as a thick, sticky mixture. The cornflour and cheese act as the glue, so the tots keep their shape and do not crumble apart in the basket.

  3. Shape and chill

Take small portions and roll them into short cylinder shapes with your hands, pressing firmly so there are no loose bits. Freeze them for 10 min so they set hard, which helps them hold their shape and crisp evenly.

  4. Air fry until crisp

Lay the tots in the basket in a single layer with a little space between them. Air fry at 190°C for 16 min, shaking the basket halfway, until they are golden and crisp outside and tender all the way through.
