Ingredients

  • potato2
  • carrot1
  • peas1/4 cup
  • breadcrumbs1 cup
  • cornflour2 tbsp
  • salt1/2 tsp

Method

  1. Mash and mix

Boil the potato until soft, drain it well, then mash with the grated carrot, peas, cornflour and salt until the mixture holds together. A dry, well-drained mash binds firmly so the nuggets keep their shape while cooking.

  2. Shape the nuggets

Take small portions of the mixture and press each into a flat nugget shape with your hands. Keeping them thin and the same size helps them cook through evenly and crisp up quickly without a soft, doughy centre.

  3. Coat in breadcrumbs

Press each nugget into the breadcrumbs on all sides until it is fully coated. A complete crumb layer is what turns crunchy and golden in the basket while sealing in the soft vegetable filling so it stays moist.

  4. Air fry until golden

Place the nuggets in a single layer in the basket. Air fry at 190°C for 12 min, flipping once, until they are golden and crisp on the outside. The flip lets both faces meet the heat so they colour evenly.
