Ingredients

  • Boiled potatoes3 large
  • Corn flour4 tbsp
  • Rice flour2 tbsp
  • White pepper and salt1 tsp
  • Milk2 tbsp

Method

  1. Mash smooth

Mash the boiled potatoes while they are still warm until there is not a single lump left. A smooth base is what lets the smiley faces hold clean, crisp edges instead of breaking apart at the eyes and mouth.

  2. Bind the dough

Add corn flour, rice flour, white pepper, salt and just enough milk to bring it into a stiff dough. Knead it lightly until it stops sticking to your fingers, so the shapes stay firm and do not spread out.

  3. Roll and cut

Roll the dough between two sheets of parchment to about half a centimetre thick. Cut circles with a lid, then poke two eyes and a curved smile with a straw and a spoon tip, pressing cleanly so the faces stay sharp.

  4. Chill the faces

Lay the cut smileys on a tray and freeze them for 20 minutes. Firming the dough keeps the carved eyes and smile crisp and stops the faces from puffing shut in the heat of the basket.

  5. Air-fry till crispy

Brush both sides lightly with oil and arrange them without overlapping so each one browns evenly. Air-fry at 200C for 12 min, flipping once, until golden and crisp at the edges.
