Ingredients

  • Mixed grated veggies (carrot, beans, peas)1.5 cups
  • Boiled mashed potato1 cup
  • Bread crumbs1 cup
  • Corn flour3 tbsp
  • Chaat masala and salt1 tsp

Method

  1. Make the mix

Squeeze any excess water from the grated veggies and combine them with the mashed potato in a wide bowl. Add chaat masala, salt and corn flour, then knead into a firm, pliable dough that holds its shape.

  2. Shape the nuggets

Pinch off walnut-sized portions and press each into a flat rounded nugget about a centimetre thick. Keep your palms lightly oiled so the dough does not stick while you shape all of them.

  3. Crumb coat

Make a thin slurry of corn flour and water, dip each nugget in it, then roll generously in bread crumbs. Press the crumbs on firmly so they cling to every side for an even crust.

  4. Chill briefly

Rest the coated nuggets in the fridge for ten minutes so the coating sets. This stops them from falling apart and gives a crisper finish once air-fried.

  5. Air-fry till golden

Lightly spray the nuggets with oil and arrange in a single layer. Air-fry at 190C for 12 minutes, flipping halfway, until deeply golden and crisp on both sides.
