Ingredients

  • fish300 g
  • cornflour3 tbsp
  • breadcrumbs1 cup
  • salt1/2 tsp
  • black pepper1/4 tsp
  • lemon1/2

Method

  1. Cut the fish

Pat the fish fillet dry with a paper towel, since a dry surface helps the coating grip. Cut it into finger-length strips of even thickness so they all cook through at the same time in the basket.

  2. Season and dust

Sprinkle the strips with salt, pepper and a squeeze of lemon. Dust each one with cornflour on all sides, which dries the surface and gives the breadcrumbs a base to cling to for a crisp coat.

  3. Coat in breadcrumbs

Press the dusted strips firmly into the breadcrumbs until fully covered. A complete, even coat is what turns crisp and golden all over, with no bare patches that would cook up soft and pale.

  4. Air fry until crisp

Place the fish fingers in the basket without overlapping. Air fry at 190°C for 10 min, flipping halfway, until golden and crisp and the fish turns opaque and flakes easily, the sign it is cooked.
