Ingredients

  • Chicken mince400 g
  • Breadcrumbs1 cup
  • Egg, beaten1
  • Onion, grated2 tbsp
  • Black pepper1 tsp
  • Oregano1 tsp

Method

  1. Make the nugget mix

Mix the chicken mince with the grated onion, 2 tablespoons of breadcrumbs, salt, pepper and oregano. Knead briefly until it just holds together. A short mix binds it enough so the nuggets do not crumble when you shape them.

  2. Shape and chill

Flatten the mix into small oval nuggets about a centimetre thick. Chill for 15 minutes so they firm up. Cold nuggets hold their shape while you coat them and are far less likely to fall apart in the basket.

  3. Egg and crumb

Dip each nugget in the beaten egg, then press it into the remaining breadcrumbs for full cover. The egg glues the crumbs on, and a second crumb pass gives a thicker, extra-crunchy shell if you like.

  4. Air-fry until golden

Arrange in a single layer and spray both sides with oil. Air fry at 200°C for 15 min, flipping once halfway, until deep golden and cooked through with no pink in the centre. The oil helps the crumbs brown evenly.
