Ingredients
- Maida (all-purpose flour)2 cups
- Fine semolina (rava)3 tbsp
- Powdered sugar1/2 cup
- Ghee (melted)4 tbsp
- Warm milk1/2 cup
- Cardamom powder1/2 tsp
Method
Make the dough
Whisk the maida, semolina, powdered sugar and cardamom together in a wide bowl. Pour in the melted ghee and rub it through the flour with your fingertips until the mix resembles damp sand.
Knead firm
Add the warm milk a little at a time, kneading into a stiff, smooth dough that holds its shape without cracking. Cover and rest it for fifteen minutes so the semolina softens.
Roll and cut
Roll the dough out to a quarter-inch thickness on a lightly floured surface. Score it into small diamonds with a knife or pastry cutter and separate the pieces gently.
Prep the basket
Brush the air-fryer basket lightly with ghee and arrange the diamonds in a single layer with a little space between each. Give them a faint brush of ghee on top for even browning.
Air-fry to golden
Air-fry at 170C for 16 minutes, shaking the basket twice so they colour evenly into a pale gold. Let them cool fully on a rack where they crisp up to that signature shankarpali crunch.
