Ingredients
- banana2 ripe, mashed
- flour1.5 cups
- sugar1/2 cup
- oil1/3 cup
- walnuts1/3 cup, chopped
- baking powder1 tsp
Method
Mash the banana
Mash the ripe bananas in a large bowl until smooth. Really ripe, well-mashed bananas melt into the batter and add natural sweetness and moisture, which keeps the finished cake soft rather than dry.
Mix wet ingredients
Stir in the sugar and oil until well combined and slightly glossy. Beating the oil in fully coats the flour later and traps a little air, which helps the cake bake tender with an even, soft crumb.
Fold in dry ingredients
Fold in the flour, baking powder and chopped walnuts just until combined, with no flour streaks. Mixing gently keeps the batter light, as overworking it develops the flour and makes the cake dense.
Bake
Pour into a greased small tin and air fry at 160°C for 25 min until a skewer comes out with a few moist crumbs. Moist crumbs mean it is just done and still soft, while a bone-dry skewer means it has gone too far.
