Mizo Koat Pitha Bites
Banana, rice flour and jaggery bites, a well-loved Mizo tea-time snack that is good for festive-season gatherings. The original is a fried fritter; this air-fried take uses a firmer dough, so the bites are soft and chewy.

Ingredients
- Ripe banana3, mashed
- Rice flour1 cup + more if needed
- Grated jaggery1/3 cup
- Desiccated coconut2 tbsp
- Salta pinch
- Oil, for brushing1 tbsp
Method
Mash the bananas
Mash the bananas until smooth with no big lumps. Very ripe bananas with brown spots give the best sweetness.
Make a firm dough
Mix in the jaggery, coconut and salt, then add rice flour a little at a time until you can roll the mix into a ball that holds its shape. The fried version uses a loose batter, but the air fryer needs a firmer dough so the bites do not spread.
Rest and roll
Rest the dough for 10 minutes. With oiled hands, roll it into small balls about the size of a large marble, and press each one slightly flat so it cooks through.
Prepare the basket
Line the basket with perforated parchment. Arrange the bites with space between them and brush each with a little oil.
Air-fry until golden
Air-fry at 180°C for 14 min, turning them once halfway, until deep golden outside and cooked through when you break one open. Let them cool for 5 minutes, as they are soft and very hot when they first come out. Serve with tea.
