Ingredients
- Ripe bananas3 medium
- All-purpose flour1/2 cup
- Rice flour2 tbsp
- Sugar3 tbsp
- Cardamom powder1/4 tsp
- Pinch of salt1 pinch
Method
Slice the bananas
Peel the bananas and cut them on a diagonal into thick slices about a centimetre wide. Thicker pieces stay soft and custardy inside while the coating crisps up around them.
Make the batter
Whisk the all-purpose flour, rice flour, sugar, cardamom and salt with just enough water to form a thick, clingy batter. The rice flour is the secret to extra crunch, so do not skip it.
Coat each slice
Dip every banana piece into the batter and let the excess drip off so the coating is even. A thin, complete layer fries far crisper than a thick, gloopy one.
Prep the basket
Lightly brush or spray the air-fryer basket with oil and place the slices apart so air circulates freely. Crowding them traps steam and leaves the fritters soggy.
Air-fry to a crisp finish
Air-fry at 190C for 12 minutes, flipping the fritters halfway and giving them a light oil spray on the second side. They are ready when deep gold and crackly to the touch.
