Ingredients
- Rice flour1.5 cups
- Grated jaggery2/3 cup
- White sesame seeds1/3 cup
- Ghee2 tbsp + 1 tbsp for brushing
- Cardamom powder1/2 tsp
- Milk2-3 tbsp
Method
Warm the jaggery
Warm the jaggery with 2 tbsp water on low heat just until it melts, then take it off the heat. Do not boil it into a syrup, as a thick syrup makes the dough set hard. Let it cool until warm.
Make the dough
Mix the rice flour and cardamom, then rub in 2 tbsp ghee. Pour in the warm jaggery and mix with a spoon, then with your hand. Add milk a spoon at a time until you get a soft dough that does not crack when pressed.
Rest the dough
Cover the dough and rest it for 20 minutes. Rice flour has no gluten, so resting helps it hydrate and hold together when shaped.
Shape and coat
Roll small balls the size of a large marble and flatten each into a 5 cm disc. Press one side firmly into the sesame seeds so they stick in a thick layer. Smooth any cracked edges with a damp finger.
Brush and arrange
Line the basket with perforated parchment. Place the anarsa sesame side up, brush the tops with a little ghee and leave space between each.
Air-fry gently
Air-fry at 170°C for 12 min, until the sesame turns golden and the bottoms feel set. Do not flip them, so the sesame stays on top. Cool for 10 minutes on the tray, as they are soft when hot and firm up as they cool.
