Ingredients
- puff pastry sheet2
- apple2 medium, chopped
- sugar3 tbsp
- cinnamon1/2 tsp
- butter1 tbsp
- milk1 tbsp, for brushing
Method
Cook the filling
Cook the chopped apple with the butter, sugar and cinnamon in a pan until soft and any liquid has cooked away, then cool it fully. A cooled, dry filling will not melt the pastry or make it soggy, and it will not leak out.
Fill the pastry
Cut the puff pastry into squares, spoon a little cooled filling onto one half and fold the pastry over. Press the edges firmly with a fork to seal them, which stops the filling bubbling out as the pastry puffs up.
Brush the tops
Brush the tops lightly with milk to help them turn glossy and golden, then prick a small vent in each pie with a knife. The vent lets steam escape so the pies do not split open along the sealed edge.
Bake
Air fry at 180°C for 15 min until the pastry is fully puffed and a deep golden brown all over. Leave the pies to cool for a few minutes before biting in, as the fruit filling inside stays very hot for a while.
