Ingredients
- Croissant dough roll1 tube
- Honey3 tbsp
- Melted butter2 tbsp
- Flaky sea salt1/2 tsp
- Vanilla extract1/2 tsp
Method
Cut the dough
Unroll the croissant dough on a clean board and slice it into bite-sized squares about two centimetres wide. Keep the pieces the same size so they all puff up and brown at the same rate.
Toss in butter
Gently coat the dough squares in the melted butter so the outsides crisp into golden layers. A light brush is plenty, since too much fat leaves them greasy rather than crisp and flaky.
Whisk the glaze
Stir the honey with the vanilla in a small bowl until loose and easy to pour. Warm it for a few seconds if it is stiff, as a runny glaze clings evenly to the hot bites later.
Arrange in basket
Place the squares in a single layer in the lined basket with small gaps between them. Crowding traps steam between the pieces and leaves the centres doughy, so cook in batches if needed.
Air-fry and glaze
Air-fry at 175C for 9 min until deeply golden and puffed, shaking once at the halfway mark. Drizzle the warm honey glaze over the hot bites and finish with a pinch of flaky sea salt.
