Ingredients
- dates1 cup chopped
- walnut1/2 cup
- flour1 cup
- milk3/4 cup
- oil1/3 cup
- sugar1/3 cup
Method
Soak the dates
Warm the milk and soak the chopped dates in it until they turn soft, then mash them into a rough paste. Softened dates blend in smoothly and lend natural sweetness, so the crumb stays moist without any extra syrup.
Mix the batter
Stir the oil and sugar into the date mix, then fold in the flour until you have a smooth batter. Fold gently and stop as soon as it comes together, since over-mixing the flour can make the cake dense and tough.
Add walnuts
Fold in the walnuts, then pour the batter into a greased tin that fits your basket. Coating the walnuts in the batter keeps them suspended through the cake rather than sinking in a heavy layer at the bottom.
Bake
Bake at 160°C for 30 min, until the top is set and a skewer pushed into the centre comes out with just a few moist crumbs. A clean-ish skewer means the middle is cooked and not still wet.
