Ingredients
- Rolled oats1 cup
- All-purpose flour1/2 cup
- Softened butter55 g
- Brown sugar1/2 cup
- Raisins1/3 cup
- Cinnamon1 tsp
Method
Soak the raisins
Cover the raisins with warm water for ten minutes, then drain them well. Soaking plumps them up so they stay soft and juicy in the cookie instead of drying into hard, leathery bits.
Cream and bind
Beat the butter and brown sugar until creamy, then mix in a splash of water to loosen it into a soft, spreadable dough. The little bit of moisture helps the oats and flour come together smoothly.
Combine dry
Stir the oats, flour, cinnamon and a pinch of salt into the wet mix until a thick dough forms, then fold the drained raisins through evenly. Spreading the raisins out means every cookie gets its share.
Portion
Scoop heaped tablespoons onto a lined tray and press each down lightly into a thick disc. Leave gaps between them so hot air can move around each cookie and brown the edges evenly.
Air-fry
Air-fry at 160C for 13 min until set at the edges with a soft middle. Cool them on a wire rack so the steam escapes and the chew develops nicely as they firm up.
