Ingredients
- Ripe bananas, mashed2
- All-purpose flour3/4 cup
- Sugar2 tbsp
- Cardamom powder1/2 tsp
- Rice flour2 tbsp
- Oil, for brushing2 tbsp
Method
Mash the bananas
Mash the very ripe bananas until smooth, then stir in the sugar and cardamom. The riper the fruit, the sweeter and more fragrant the bondas, and a smooth mash means no lumps to leave raw streaks inside the fried balls.
Build the batter
Fold in the flour and rice flour with a pinch of salt to make a thick, sticky batter. The rice flour is the trick that keeps the outside crisp rather than cakey, so do not skip it or swap it for more plain flour.
Rest briefly
Let the batter sit for 10 minutes so the flour soaks up moisture and the mixture firms up. A rested batter holds a soft mound on a spoon, which makes the bondas easier to shape and stops them spreading flat.
Shape and oil
Scoop rough balls with an oiled spoon and brush each one all over with oil. Preheat the air fryer to 175°C for 3 minutes while you shape them, so they start cooking the moment they go in and set into a round shape.
Air-fry until golden
Place the bondas in a single layer on perforated parchment and air fry at 175°C for 14 min, turning gently halfway. They should be deep golden and lightly crisp, so dust them with a little sugar and serve warm.
