Ingredients
- flour1 cup
- butter100 g
- brown sugar1/2 cup
- curd2 tbsp
- chocolate chips1/2 cup
- baking powder1/2 tsp
Method
Cream butter and sugar
Beat the soft butter and brown sugar together until pale and fluffy. Beating in air here is what gives the cookies a light bite, so keep going for a couple of minutes until the mix looks creamy.
Add curd
Mix in the curd until smooth. It binds the dough in place of egg and adds a little moisture, which keeps these eggless cookies soft in the middle rather than dry and crumbly.
Fold in dry ingredients
Fold in the flour, baking powder and chocolate chips until a soft dough just comes together. Stop as soon as the flour is worked in, since over-mixing makes the cookies tough instead of tender.
Shape and bake
Roll the dough into small balls, flatten each slightly and set them on parchment in the basket with gaps between. Air fry at 160°C for 10 min until the edges turn golden and the centre is just set.
