Ingredients
- All-purpose flour2 cups
- Cold butter1/2 cup cubed
- Buttermilk2/3 cup
- Granulated sugar3 tbsp
- Baking powder1 tbsp
Method
Rub in the butter
Combine the flour, sugar and baking powder, then rub in the cold cubed butter with your fingertips until it looks like coarse crumbs. Keeping the butter cold makes the flaky pockets that give scones their tender lift.
Add buttermilk
Pour in the buttermilk and stir just until a rough, shaggy dough comes together. Stop as soon as it holds, because over-working the dough builds gluten and turns the scones tough and chewy.
Shape the dough
Tip the dough onto a floured board and pat it into a slab about two centimetres thick. Handle it as little as you can and do not roll it hard, which keeps the crumb light and the scones tall.
Cut into bites
Cut the slab into small squares or rounds and brush the tops lightly with buttermilk. Press the cutter straight down without twisting, as twisting seals the edges and stops them rising evenly.
Air-fry until risen
Arrange the bites in a single layer and air-fry at 170C for 12 min until risen and golden on top. Let them cool for a few minutes, then split and serve with butter.
