Ingredients
- All-purpose flour1 cup
- Softened butter55 g
- Ajwain (carom seeds)1.5 tsp
- Powdered sugar2 tbsp
- Milk2 tbsp
- Salt1/3 tsp
Method
Crush the ajwain
Lightly crush the carom seeds between your palms to release their oils. This wakes up the sharp, thyme-like aroma that gives these biscuits their flavour, so do not skip it even though it takes a moment.
Rub the fat in
Rub the butter into the flour, sugar and salt with your fingertips until it looks like sand. Mix the crushed ajwain in evenly so its flavour spreads through every biscuit instead of clumping in a few.
Form the dough
Add the milk a little at a time and knead briefly into a firm, smooth dough. Stop the moment it comes together, as working it too much builds gluten and makes the biscuits hard instead of short and crumbly.
Roll and cut
Roll the dough to about 5 mm thick and cut into squares or rounds. Prick each one all over with a fork, which lets steam escape so the biscuits bake flat and crisp rather than puffing up.
Air-fry
Air-fry at 160C for 14 min until golden and firm to the touch. Let them cool fully before serving, as they finish crisping as they cool and are still a little soft while hot.
