Ingredients

  • Apples2 large
  • Cinnamon powder1 tsp
  • Powdered sugar1 tbsp
  • Lemon juice1 tsp

Method

  1. Slice paper-thin

Core the apples and slice them as thin as you can, ideally with a mandoline for even rounds. Uniform thinness is the single most important factor for chips that crisp instead of staying leathery.

  2. Stop browning

Toss the slices in lemon juice mixed with a splash of water. This keeps them looking bright and adds a faint tartness that balances the sweetness.

  3. Dust with spice

Pat the slices dry, then sprinkle them with cinnamon and powdered sugar on both sides. Drying first lets the coating stick and speeds up the crisping.

  4. Lay them flat

Arrange the slices in a single layer without overlap, working in batches if needed. Overlapping rounds will steam each other and never fully dry out.

  5. Air-fry low and slow

Air-fry at 150C for 18 minutes, flipping every six minutes so they dehydrate evenly. They crisp further as they cool, so pull them once stiff at the edges and let them rest.
