Ingredients
- Shortcrust pastry2 sheets
- Apples, diced2
- Brown sugar3 tbsp
- Ground cinnamon1 tsp
- Cornflour1 tsp
- Milk2 tbsp
Method
Cook the filling
Toss the diced apples with brown sugar, cinnamon and cornflour in a pan over medium heat. Cook for five minutes until the apples soften and the juices thicken into a glossy syrup, then cool completely.
Cut the pastry
Roll out the shortcrust and cut into even rectangles or rounds, allowing two pieces per pie. Keep the offcuts chilled in case you want to patch any tears.
Fill and seal
Spoon a heaped tablespoon of cooled apple onto half the pieces, leaving a clear border. Lay a second piece on top and press the edges firmly with a fork to crimp and seal.
Glaze and vent
Brush the tops with a little milk and cut two small slits to let steam escape. A light dusting of sugar gives an extra crackle once baked.
Air-fry to golden
Place the pies in a single layer with gaps between them and air-fry at 180C for 14 minutes until deeply golden and flaky. Cool for five minutes before eating as the filling stays molten.
