Ingredients
- All-purpose flour2 cups
- Warm milk3/4 cup
- Sugar3 tbsp
- Saffron strands1 pinch
- Ghee3 tbsp
- Active dry yeast1 tsp
Method
Bloom the saffron
Soak the saffron in two tablespoons of warm milk until it turns deep gold. This releases the colour and aroma that defines sheermal, so give it a good five minutes.
Activate the yeast
Stir the yeast and a pinch of sugar into the remaining warm milk and wait until it froths. A frothy mix confirms the yeast is alive and your bites will rise soft and fluffy.
Knead the dough
Mix the flour, sugar, ghee, saffron milk and yeast milk into a smooth, soft dough. Knead well for several minutes to build the structure that keeps the bites tender.
Prove and shape
Cover and let the dough double in size, then punch it down and cut into small rounds. Prick each one with a fork to keep them from ballooning unevenly.
Glaze and air-fry
Brush the bites with saffron milk and a little ghee, then air-fry at 175C for 12 minutes until softly golden. Brush with more ghee straight out so they stay glossy and moist.
