Ingredients
- All-purpose flour1 cup
- Sugar1/2 cup
- Cocoa powder1 tbsp
- Buttermilk1/2 cup
- Oil1/4 cup
- Red food colour1 tsp
Method
Colour the wet mix
Whisk the buttermilk, oil and red colour together until the liquid is evenly tinted a deep crimson. The slight sourness of buttermilk is the classic red velvet backbone and keeps the crumb soft.
Combine the dry
In another bowl, stir together the flour, sugar and cocoa until evenly mixed. The small amount of cocoa adds a gentle chocolate note without darkening the batter and dulling the bright red.
Bring together
Pour the wet mix into the dry and fold just until a smooth, vivid batter comes together. Mix only until the flour disappears, because overmixing toughens the crumb and dulls that velvety softness.
Fill the moulds
Spoon the batter into greased silicone moulds, filling each about two-thirds full so they rise without spilling. Level the tops so every bite bakes into a neat, even little round.
Air-fry the red velvet bites
Set the moulds in a preheated basket and air-fry at 165C for 16 min until a skewer poked into the centre comes out clean. Cool them fully before topping so the crumb sets and holds together.
