Ingredients
- All-purpose flour1 cup
- Sugar1/2 cup
- Butter1/3 cup
- Milk1/3 cup
- Cocoa powder2 tbsp
- Baking powder1 tsp
Method
Make the base batter
Cream the butter and sugar together until pale, then fold in the flour, baking powder and milk to a smooth batter. Beat only until even, because too much mixing makes the crumb tough instead of soft.
Split and flavour
Divide the batter into two bowls and stir the cocoa into one half. Add a teaspoon of milk to the cocoa half, since cocoa soaks up moisture and you want both batters the same thickness so they swirl neatly.
Layer the colours
Spoon alternating dollops of the plain and chocolate batter into greased moulds. Dropping them side by side, not stirred together, is what sets up the two-tone marble pattern.
Swirl gently
Drag a skewer through each mould in a slow figure-eight to pull the two colours together. Stop after a pass or two, since over-swirling blends everything into a dull single brown.
Air-fry the marble bites
Set the moulds in a preheated basket and air-fry at 160C for 18 min until set and springy when pressed. Let them cool before unmoulding so the swirl stays sharp and they lift out without breaking.
