Ingredients
- Khoya (mawa)1 cup
- All-purpose flour3 tbsp
- Sugar1.5 cups
- Cardamom pods4 pods
- Rose water1 tsp
- Ghee1 tbsp
Method
Make the syrup first
Boil the sugar with one and a half cups of water, the crushed cardamom and a splash of rose water until slightly sticky. Keep it warm and runny so it soaks into the bites the second they go in.
Form a soft dough
Crumble the khoya, mix in the flour and knead gently into a smooth, lump-free dough. Handle it lightly; overworking makes the bites dense instead of melt-in-the-mouth.
Roll crack-free balls
Grease your palms with ghee and roll small, perfectly smooth balls with no surface cracks. Any crack will split open and let the bite fall apart while cooking.
Brush with ghee
Lightly coat each ball in ghee and place them spaced apart in the basket. The thin fat layer mimics deep frying and gives an even golden-brown colour.
Air-fry then soak
Air-fry at 160C for 10 minutes, gently shaking halfway until uniformly browned. Drop the hot bites straight into the warm syrup and leave them to soak at least 30 minutes before serving.
