Ingredients
- Grated carrot1 cup
- All-purpose flour1 cup
- Brown sugar1/3 cup
- Oil1/4 cup
- Mixed spice1 tsp
- Baking powder1 tsp
Method
Sweeten the carrots
Stir the grated carrot with the brown sugar and oil and let it rest for five minutes. The sugar pulls a little moisture out of the carrot, and that juice is what keeps the finished bites soft and moist.
Add the dry mix
Fold in the flour, mixed spice and baking powder until you have a thick, spoonable batter. Mix just until combined, since working it too hard makes the bites dense instead of light and tender.
Check consistency
If the batter feels stiff, loosen it with a small splash of water until it drops slowly off the spoon. It should hold a soft peak, not run thin, so the bites rise without sinking in the middle.
Fill the moulds
Spoon the batter into greased silicone moulds and level each top with the back of the spoon. Filling them to the same height helps every bite bake and set at the same rate.
Air-fry the carrot bites
Set the moulds in a preheated basket and air-fry at 160C for 17 min until they rise and spring back when lightly pressed. Cool them fully in the moulds before turning out so they hold their shape.
