Ingredients

  • flour1/2 cup
  • cocoa powder2 tbsp
  • sugar1/4 cup
  • milk1/3 cup
  • oil2 tbsp
  • baking powder1/2 tsp

Method

  1. Mix dry ingredients

Whisk together the flour, cocoa powder, sugar and baking powder until evenly blended. Mixing the dry parts first spreads the baking powder right through, so the bites rise evenly with no bitter cocoa pockets.

  2. Add wet ingredients

Stir in the milk and oil until the batter is smooth and free of lumps. Stop mixing as soon as it comes together, since over-beating develops the flour and makes the crumb tough and rubbery instead of light.

  3. Fill cups

Divide the batter between small heatproof cups, filling each only halfway. Leaving room lets the bites puff up and dome nicely instead of spilling over the rim and sticking as they cook.

  4. Bake

Air fry at 160°C for 8 min until the tops spring back to a light touch and a skewer comes out with a few moist crumbs. The gentle heat cooks them through without drying out the edges.
