Ingredients
- Sweet corn kernels1.5 cups
- Besan (gram flour)1/2 cup
- Pickled jalapeno, chopped3 tbsp
- Spring onion1/4 cup
- Cumin powder1 tsp
Method
Crush some corn
Pulse or mash about a third of the kernels into a rough paste and leave the rest whole. The crushed corn releases its starch and binds the batter together, while the whole kernels give juicy, sweet pops in every bite.
Build the batter
Stir the besan, cumin, jalapeno, spring onion and a little salt into the corn until it forms a thick, scoopable mass. Add water only a teaspoon at a time if it feels dry, as a wet batter will spread and never crisp.
Shape the fritters
Scoop rough mounds onto a lined air-fryer tray and leave the edges craggy rather than smooth. Those uneven edges catch the heat and turn extra crisp, and pressing each mound slightly flatter helps the centre cook through.
Air-fry until set
Spray the tops with oil and air-fry at 195C for 15 min, flipping at the halfway mark so both sides colour. The fritters are ready when the edges are deep gold and the centres feel firm rather than soft or wet.
