Ingredients
- Cooked chickpeas2 cups
- Harissa paste1.5 tbsp
- Olive oil1 tbsp
- Smoked paprika1 tsp
- Sea salt0.5 tsp
Method
Dry thoroughly
Spread the cooked chickpeas on a clean towel and roll them gently to lift off every drop of moisture. Discard any loose skins you find, as these tend to burn. Bone-dry chickpeas are the single biggest secret to maximum crunch.
Pre-crisp plain
Toss the bare chickpeas with just the olive oil and a pinch of salt. Air-fry them naked first so the spices don't scorch before the legumes harden up. This staged approach keeps the harissa bright instead of bitter.
Coat with harissa
Remove the half-crisped chickpeas and fold through the harissa, smoked paprika, and remaining salt until each one wears a rusty coat. Work quickly while they are warm so the paste clings evenly. The residual heat helps the spices bloom.
Air-fry to finish
Return the coated chickpeas to the basket in a single layer and cook at 200C for 12 minutes, shaking firmly every 4 minutes. They should rattle like pebbles when done. Cool fully before serving, as they crisp further as they sit.
