Ingredients
- Boiled mashed potato2 cups
- Mozzarella cubes12 small
- Cornflour3 tbsp
- Breadcrumbs1 cup
- Chopped chives2 tbsp
- Black pepper1/2 tsp
Method
Season the mash
Mix the cooled mashed potato with the cornflour, chives, black pepper and a little salt. The cornflour binds the dough and soaks up moisture, so the bites hold their shape and do not crack in the basket.
Stuff with cheese
Take a portion of mash, flatten it on your palm, place a mozzarella cube in the centre, then fold the potato around it and seal it completely into a smooth ball so the cheese cannot leak out.
Coat in crumbs
Roll each ball in the breadcrumbs until fully and evenly covered, pressing gently so they stick. A thorough, even coat is what crisps into a golden crunch and seals the melting cheese centre inside.
Chill to firm
Refrigerate the bites for 15 minutes so they firm up. Chilling helps them hold together and keeps the cheese centre sealed, so it stays molten inside instead of leaking out as they cook.
Mist with oil
Spray the chilled bites all over with oil and arrange them in a single layer with space between each one. The light oil and the gaps let the hot air reach every side so they crisp evenly to golden.
Air-fry
Air fry at 200°C for 12 min, shaking the basket once halfway, until the bites are golden and crisp with a molten cheese core. Serve them hot for the best cheese pull, before the centre cools and sets.
