Ingredients
- Zucchini2 medium
- Chickpea flour1/2 cup
- Chopped dill2 tbsp
- Spring onion2 stalks
- Garlic2 cloves
- Sea salt1/2 tsp
Method
Grate and salt
Grate the zucchini on the coarse holes and toss it with the salt, then let it sit for ten minutes. The salt draws out water that would otherwise make the fritters fall apart.
Wring it dry
Gather the grated zucchini in a towel and squeeze hard over the sink until it stops dripping. You'll be surprised how much liquid comes out, and this step makes or breaks the texture.
Fold the batter
Mix the dry zucchini with chickpea flour, dill, sliced spring onion, and minced garlic. Stir until it just holds together; add a splash of water only if it looks dry and crumbly.
Shape the patties
Form the mixture into flat rounds about a centimeter thick and press them firmly. Flatter fritters crisp better than thick ones, which stay gummy in the center.
Line and mist
Place the patties on a lightly oiled liner or basket and mist the tops with oil. The spray encourages the lacy golden edges that make these so good.
Air-fry until set
Air-fry the fritters at 185C for 14 minutes, flipping once at the halfway mark, until both sides are golden brown and the centers feel firm to a gentle press.
