Ingredients
- paneer250 g
- cornflour3 tbsp
- rice flour1 tbsp
- chilli powder1.5 tsp
- ginger garlic paste1 tbsp
- curry leaves10 leaves
Method
Cut cubes
Cut the paneer into even bite-sized cubes and pat them dry. Uniform cubes cook at the same rate, and drying off the surface moisture helps the coating grip so it crisps rather than sliding off in the basket.
Marinate
Rub the cubes with the ginger garlic paste and chilli powder and let them sit for ten minutes. This short rest lets the paste soak into the paneer, so the flavour reaches past the surface into each cube.
Dry coat
Toss the marinated cubes with the cornflour and rice flour so every side picks up a thin, dry crust. This dry coating is what fries up crisp in the hot air and gives the cubes their crunchy edges.
Add leaves
Scatter the curry leaves over the cubes in the basket. As they crisp in the heat they release a lovely aroma and turn crackly, adding both scent and a little crunch to the finished dish.
Air fry
Air fry at 185°C for 16 min, turning once so all sides colour. The cubes are ready when they look red and firm with crisp, browned edges while staying soft and moist inside.
