Ingredients
- Bread slices4
- Gram flour (besan)1/2 cup
- Onion & tomato, chopped1/2 cup
- Turmeric, chilli & ajwain1 tsp
- Coriander leaves2 tbsp
- Oil for brushing1 tbsp
Method
Whisk the batter
Mix the gram flour with water into a smooth, pourable batter with no lumps, then stir in the chopped onion, tomato, coriander, turmeric, chilli and ajwain. Add salt and let it rest five minutes so the besan hydrates and the batter thickens enough to cling.
Coat the bread
Dip each slice so one side is fully covered, or spread the batter on thickly with a spoon. Aim for a coating that clings without dripping off the edges, because a thick, even layer is what fries up into a crisp, uniform crust.
Brush with oil
Lightly brush the coated side with a thin film of oil so the besan crisps and turns golden in the dry air-fryer heat. A light film is enough, since too much oil pools under the slice and leaves it greasy rather than crunchy.
Air-fry until crisp
Lay the slices batter-side up in the basket without overlapping and cook at 195C for 10 min, until the coating sets firm and turns deep golden brown. Serve hot with ketchup or green chutney while the crust is at its crispest.
