Ingredients
- Whole-wheat rotis4
- Mixed boiled vegetables2 cups
- Frankie masala1.5 tbsp
- Onion-lemon-chilli mix1 cup
- Beaten egg or thin batter2
- Oil sprayas needed
Method
Cook the filling
Saute the boiled mixed vegetables with the frankie masala, a splash of lemon and salt until dry and well coated. Mash lightly so the filling binds and does not tumble out of the roll.
Coat the roti
Brush one side of each roti with beaten egg or a thin besan batter for the eggless version. This forms the signature soft-yet-crisp skin that defines a true frankie.
Fill and roll tight
Spoon the warm filling in a line down the centre, scatter the onion-lemon-chilli mix and roll the roti firmly into a tube. Secure the seam underneath so it stays shut during cooking.
Wrap to hold shape
Pin the rolls closed with a toothpick or a snug strip of parchment to keep them from unfurling. Mist the outside lightly with oil for even browning.
Air-fry the rolls
Set the rolls seam-side down in the basket and air-fry at 180C for 12 minutes, rolling them a quarter-turn twice for an all-over crackle. Serve hot with extra chilli sauce.
