Ingredients
- Rolled oats1.5 cups
- Mixed nuts, chopped1/2 cup
- Honey3 tbsp
- Coconut oil2 tbsp
- Cinnamon1/2 tsp
Method
Mix the binder
Warm the honey and coconut oil together until they turn runny and pourable, then stir in the cinnamon. This warm, loose syrup coats every oat and is what glues the mixture into clusters.
Coat thoroughly
Toss the oats and chopped nuts through the syrup until every piece glistens and looks wet. Press the mixture together with the back of a spoon into rough clumps, which crisp and hold as they cook.
Spread in a tray
Tip the clusters into a parchment-lined air-fryer tray in a single, compact layer. Keeping the clumps touching helps them bake together and hold their shape rather than scatter loose.
Air-fry low and slow
Cook at 150C for 12 min, gently shaking the tray once near the end without breaking up the clumps. Let the granola cool fully in the tray, where it firms up into crisp, snappable clusters.
