Ingredients
- Large mild green chillies (bhavnagri)8
- Gram flour (besan)3/4 cup
- Fennel seeds, crushed1 tsp
- Turmeric1/2 tsp
- Amchur1 tsp
- Oil2 tbsp
Method
Slit the chillies
Make a single long slit down each chilli without cutting it in half and scrape out the seeds for milder heat. Keep the stems on as little handles.
Roast the besan
Dry-roast the gram flour in a pan over low heat until it turns golden and smells nutty, then take it off the heat. Stir in crushed fennel, turmeric, amchur, salt and a tablespoon of oil to make a crumbly stuffing.
Fill the chillies
Push the roasted besan masala into each slit, pressing it deep so the chillies are well packed. Wipe away any spillage from the outside.
Oil the skins
Brush the stuffed chillies lightly with the remaining oil so their skins blister evenly. Lay them flat with the slits facing up so the filling does not fall out.
Air-fry to blister
Air-fry the chillies at 185C for 13 minutes, shaking gently once. They are done when the skins are wrinkled and blistered and the besan filling has set and turned a deeper gold.
