Ingredients
- Waxy potatoes, cubed4 medium
- Chaat masala1.5 tsp
- Red chilli powder1/2 tsp
- Lime juice1 tbsp
- Chopped coriander3 tbsp
- Tamarind chutney2 tbsp
Method
Parboil the cubes
Boil the potato cubes just until a knife slips in but they still hold their shape, then drain well. Letting the steam fully escape keeps them from turning mushy in the basket.
Season the raw coat
Toss the dried cubes with a little oil, half the chaat masala, and the chilli powder until each face is lightly slicked. This builds a base layer of flavour before the crust forms.
Spread evenly
Lay the cubes out so they are not stacked, giving the hot air room to reach every side. Crowding traps moisture and you lose the crunch.
Finish in the bowl
Tip the hot cubes into a bowl and shower with the remaining chaat masala, lime juice, and coriander. Drizzle tamarind chutney and toss so every bite gleams.
Air-fry the cubes
Air-fry at 200C for 15 minutes, shaking the basket twice so the cubes brown evenly. They are ready when the corners are deep golden and crisp to the bite.
