Ingredients

  • Rolled oats1 cup
  • Grated mixed vegetables1.5 cups
  • Boiled potato1 small
  • Ginger-garlic paste1 tsp
  • Garam masala1 tsp
  • Coriander2 tbsp

Method

  1. Toast the oats

Dry-roast half the oats until they smell nutty and grind them to a coarse powder, leaving the rest whole. The powder binds the mixture while the whole oats keep a bit of chew and crunch.

  2. Combine the mixture

Mash the boiled potato and mix it with the grated vegetables, both the powdered and whole oats, ginger-garlic paste, garam masala and coriander. Knead until the mass holds firmly when you press it.

  3. Rest to absorb

Let the mixture sit for ten minutes so the oats swell and soak up the extra moisture. This resting step firms the mix so the balls hold together and do not crack open while cooking.

  4. Roll the balls

Roll the mixture into small, evenly sized balls so they all cook at the same rate. Press each one firmly as you shape it, which removes air gaps that would make them break apart in the basket.

  5. Air-fry till golden

Arrange the balls with space between them and air-fry at 185°C for 14 min, shaking the basket once. They are done when crisp and golden brown outside and hot and soft in the middle.
