Ingredients
- Okra (bhindi)250 g
- Besan (gram flour)2 tbsp
- Oil1 tbsp
- Amchur (dry mango)1/2 tsp
- Red chilli powder1/2 tsp
- Saltto taste
Method
Wash and dry well
Rinse the okra, then dry every pod completely before you cut it, because any water left on it makes the whole batch turn slimy. Slit each pod lengthways into thin strips so they crisp quickly and evenly in the hot air.
Spice and dredge
Toss the strips with the chilli powder, amchur and salt, then scatter the besan over them a little at a time. The gram flour soaks up the sticky sliminess and forms the thin coat that fries up into a proper crisp shell.
Loosen with oil
Drizzle over the oil and mix gently so the besan turns into a thin coat that clings to each strip rather than sitting in wet lumps. Pull apart any strips that stick together so hot air can reach every side.
Air-fry until crisp
Spread the strips loosely in the basket and air-fry at 180°C for 12 min, shaking every 4 minutes so they crisp on all sides. They should rattle when you shake the basket; if any are still soft, cook them a little longer until they do.
