Ingredients
- Raw sunflower seeds1.5 cups
- Oil1 tsp
- Black pepper1/2 tsp
- Lemon juice1 tsp
- Salt1/4 tsp
Method
Dress the seeds
Toss the sunflower seeds with the oil, lemon juice, pepper and salt. The lemon adds brightness but also a little moisture, so use just enough to season without making them wet.
Rest briefly
Let the seasoned seeds sit for five minutes so the flavours soak in. This short pause helps the seeds absorb the lemon rather than letting it pool at the bottom.
Line the basket
Spread the seeds in a thin even layer, ideally on a perforated liner since small seeds can slip through wide basket gaps. A single layer ensures they toast rather than steam.
Shake often
These little seeds cook fast and unevenly, so plan to shake the basket every 3 minutes. Frequent tossing stops the bottom layer from darkening ahead of the rest.
Toast and cool
Air-fry at 150C for 9 minutes until lightly golden and fragrant. Cool them fully on a plate, where they firm up into a clean, nutty crunch before storing airtight.
