Ingredients
- Paneer300 g
- Crushed cornflakes1 cup
- Cornflour batter1/2 cup
- Chilli powder1 tsp
- Oregano1 tsp
- Oil sprayas needed
Method
Cut into popcorn pieces
Dice the paneer into small bite-sized chunks roughly the size of a large popcorn kernel so they cook through quickly. Pat them dry on a clean towel so the batter clings instead of sliding off.
Make a clingy batter
Whisk cornflour with a little water, chilli powder and a pinch of salt into a batter thick enough to coat the back of a spoon. This wet layer is what glues the cornflakes on, so do not make it runny.
Double-coat for crunch
Dip each paneer piece in the batter, then roll it in the crushed cornflakes mixed with oregano, pressing gently so the flakes stick. Set the coated pieces on a plate and lightly mist them all over with oil spray.
Air-fry to a golden crackle
Arrange the pieces in a single layer and air-fry at 190C for 13 minutes, shaking once around the eight-minute mark. They are ready when the crust is deep golden and audibly crisp; serve hot before the crunch softens.
