Ingredients
- Paneer, grated1 cup
- Grated mozzarella1/2 cup
- Spring roll sheets8
- Garam masala1 tsp
- Green chilli, minced1
- Chopped coriander2 tbsp
Method
Make the filling
Combine the grated paneer, mozzarella, garam masala, minced green chilli and coriander in a bowl with a pinch of salt. Mix until the spices are evenly spread through the cheese for a balanced filling.
Fill the wrappers
Place a neat line of filling along one edge of each spring roll sheet, keeping it well away from the sides. A tidy, moderate line makes the roll easier to close tightly and stops the filling bursting out.
Roll tightly
Fold the sides inward, then roll up firmly into a tight cylinder. Dab the final edge with a little water and press to seal, so the roll does not unravel and the cheese stays sealed inside as it melts.
Oil the rolls
Brush or spray each roll lightly with oil on all sides for an even golden finish. Arrange them seam-side down in the basket without touching, so the seam sets closed and the air crisps every surface.
Air-fry
Air fry at 190°C for 11 min, turning halfway, until the wrappers are crisp and deeply golden and the cheese inside is molten. Cool for a minute before serving so the hot filling settles and stays in.
