Ingredients
- Small tortillas or papdi8
- Sweet corn kernels2 cups
- Chaat masala & butter1 tsp + 1 tbsp
- Onion, tomato, coriander1 cup
- Tamarind & mint chutneys3 tbsp
- Nylon sev1/2 cup
Method
Shape the cups
Press each tortilla into the well of an oven safe muffin mould, or fold into a cup and pin with a toothpick. Moulding sets a firm, crisp shell that holds the bhel without turning soggy.
Crisp the corn
Toss the sweet corn with the melted butter, a pinch of chaat masala and salt, then spread it out in the basket. A single layer lets the kernels blister slightly for a roasted, sweeter flavour.
Mix the bhel
Combine the crisped corn with the chopped onion, tomato, coriander and the two chutneys just before serving. Mixing at the last minute keeps everything fresh, loose and tangy in each spoonful.
Air-fry the cups
Air-fry the moulded tortilla cups at 185°C for 8 min until set and golden, then let them cool so they crisp fully. Fill the cooled cups with corn bhel and crown with sev just before eating.
