Ingredients
- Bhajji chillies (mild)6
- Besan (gram flour)1 cup
- Tamarind-onion stuffing1/4 cup
- Baking soda1 pinch
- Red chilli powder1 tsp
Method
Prep the chillies
Slit each chilli lengthways and scrape out the seeds for a milder, gentler bite. Spoon a little of the tamarind-onion stuffing into each cavity and press it closed, so every bite carries that tangy filling through the middle.
Whisk an airy batter
Beat the besan with the chilli powder, baking soda, salt and water into a smooth, slightly thick batter. The pinch of baking soda lightens the coating so it puffs up soft inside rather than baking into a dense, heavy crust.
Coat the chillies
Hold each stuffed chilli by the stem and roll it through the batter until it is fully covered. Let the excess drip off before it goes in, because a thinner coat bakes crisp while a thick, dripping one stays gummy and pale.
Air-fry the bajjis
Lay the chillies on an oiled basket with space around each one and mist them with oil. Air-fry at 190°C for 14 min, turning once, until the batter is set firm and golden all over and no longer looks wet at the seams.
