Ingredients
- Bread slices4
- Boiled mixed veg, mashed1 cup
- Grated cheese3/4 cup
- Garam masala & red chilli1 tsp
- Coriander leaves2 tbsp
- Butter2 tbsp
Method
Spice the mash
Mash the boiled vegetables with garam masala, red chilli powder, chopped coriander and a pinch of salt until smooth. A smooth, lump-free mash spreads cleanly right to the edges without tearing the soft bread as you layer it.
Layer the filling
Butter the bread, spread a thick, even layer of the spiced mash on two slices, then scatter grated cheese over the top. The cheese melts as it heats and acts like glue that holds the whole sandwich together.
Close and seal
Top with the other slices and press the edges down firmly so the filling stays put and does not ooze out. Brush the outsides with a little butter so the bread browns evenly into a crisp, golden crust.
Air-fry until golden
Arrange the sandwiches in a single layer and cook at 190C for 12 min, turning once midway, until both faces are golden and the cheese has melted right through. Cut into triangles and serve hot.
