Ingredients

  • Spinach-tinted dough300 g
  • Blanched spinach, squeezed2 cups
  • Garlic and ginger, minced1 tbsp
  • Onion, finely chopped1/3 cup
  • Nutmeg and white pepper1/4 tsp
  • Oil for brushing2 tsp

Method

  1. Dry the spinach

Blanch the spinach for a few seconds, then squeeze it hard in a clean cloth until almost no water is left and chop it fine. Leftover moisture is the main reason momos leak, so wring it out well.

  2. Build the filling

Saute the garlic, ginger and onion for a minute, add the spinach and season with the nutmeg and white pepper. Cook just until the mix looks dry and glossy, then cool it so it does not soften the dough.

  3. Roll green discs

Roll the spinach-tinted dough into thin rounds on a lightly dusted surface. Keep each disc a little thicker in the centre than at the edges so the base can hold the dense filling without tearing open.

  4. Pleat tightly

Spoon the cooled spinach into each round, then pleat and twist the top into a sealed knot. Brush the shaped momos with oil and a light mist of water on all sides so the skins crisp and do not dry out.

  5. Air-fry the momos

Place the momos spaced apart and air-fry at 180°C for 12 min, turning once. The gaps let hot air reach all sides, so the skins set and the bottoms turn lightly golden instead of staying pale and soft.
